This spicy mushroom portobello burger is totally veg

Summer is grilling season, and that doesn’t just mean beef burgers. In this episode of ITK: Eats, we show you how to make a portobello mushroom burger that is healthy, vegetarian-friendly and easy to prepare. Plus, with ingredients like spicy miso, it has a kick of heat. It’s perfect for a weeknight dinner or for a family barbecue.

1. Combine miso, ginger and soy sauce in a small bowl and season with salt and pepper. Brush this sauce on both sides of each mushroom.

2. In a separate bowl, combine half a teaspoon of salt, sugar, rice vinegar, sesame seeds, carrot and cucumbers. Set aside.

3. Fix the cubed avocado with the mayonnaise, scallions and sriracha in a separate bowl. Season with salt and pepper.

4. Drizzle the sesame oil over both sides of each mushroom. Grill the mushrooms with the top sides down for 4 to 5 minutes over medium heat. Flip and grill for a few more minutes.

5. Spread the avocado mixture on the bottom bun, then layer on a portobello burger, and top with the cucumber carrot slaw. Spread more of the avocado mixture on the top bun.
